Purpose of steam-vacuum sterilization process is to eliminate microrganisms by application of high temperature. Water vapour is a carrier of high temperature. To obtain desired result it is necessary to remove all air from sterilization chamber as air can block vapour and cause ineffectiveness of the process. During the process we adjust temperature to product struture, this is why surface is not destroyed, smell and taste values are stabile. We can deliver product with highest microbiological demands.
